What is Fondillón?
Fondillón is a naturally sweet, oxidatively aged red wine made from 100% Monastrell grapes, harvested when overripe.
It is never fortified, yet develops extraordinary complexity thanks to a minimum of 10 years aging in old oak barrels.
Its deep mahogany colour, aromas of dried figs, roasted almonds, and antique wood, and long, velvety finish make Fondillón a true “liquid memory”.
A Protected Treasure
Fondillón is protected under the Denomination of Origin Alicante.
It is one of the few wines in Europe legally recognized as a historical and cultural product.
In 2001, it was included in the European Catalogue of Traditional Products.
Only a handful of winemakers — all based in Alicante — continue this noble craft today.
