Diània's White Wine, made from the Viognier variety, is a natural, non-interventional, dry wine made from grapes grown on small mountain farms with a strong marine influence. In an environment of exceptional biodiversity, this wine stands out for its fruity notes and a long, pleasant finish. This natural single-varietal wine takes its name from the mountainous area of Alicante, influenced by the Mediterranean climate and surrounded by vegetation. The result is a harmonious, lightly filtered wine, macerated in barrels for 3 months and with a golden hue that evolves over time. The Viognier variety used comes from small dry farms and is made using ancestral processes, without the addition of sulphites, which gives it special characteristics. TASTING NOTES The Diània white natural Viognier wine macerated in barrels presents fruity notes, mainly of stone fruits such as apricot and peach with a slight reminiscence of spices. It is dry, slightly acidic and with final aromas derived from maceration with the skins and time in barrels, which gives it a special light golden tone that intensifies with time. VINIFICATION Alcoholic fermentation takes place in 5000L stainless steel tanks at a controlled temperature. After 48 hours of light contact with the skins and 30 hours on the lees, it is placed in oak barrels for 3 months, where the wine acquires the consistency and body characteristic of this excellent Mediterranean white wine.
