Viticulture: Root stock vineyards planted over 60 years ago and farmed sustainably (organic farming certificate). Limited production: 4422 0.75 cl bottles
Production: Pressed in whole bunches, withou squeezing or destemming. Spontaneous fermentation with native yeast in 1500 l foudres. Partial malolactic fermentation. The wine is kept on its lies in the foudres until bottling. Wine without stabilization process.
Tasting note: Brilliant gold with distinct aromas of citrus fruits, spices and flowers. A vibrant and rotund acidity makes this wine unforgettable. A highly promising culinary wine. It will age well in bottles for at least 5 years.
