Enology

Hand-harvested Garnacha grapes from two clay/limestone parcels in Almonacid de la Sierra (Cariñena D.O.), grown at ~650 m elevation. Vines planted in 1983 under dry-farming and head-pruning. Wild yeast fermentation with manual pigeage (no remontage) in stainless steel vats, ensuring minimal extraction. About 90% of the wine is aged for 12 months in an underground concrete vat, while the rest matures in 500 L French oak barrels, delivering a pure and expressive Garnacha profile  .

Tasting Notes

Bright red hue with a lively bouquet of red cherries, raspberries, fresh mint, cracked pepper, and a hint of herbaceous earthiness. On the palate it’s medium-bodied, balanced and fresh, with juicy fruit, silky tannins, and a refreshing saline minerality that results in a flavorful and approachable finish  .

Food Pairing

Pairs beautifully with fresh tapas, grilled vegetables, charcuterie, roasted poultry, or pasta dishes seasoned with Mediterranean herbs (thyme, rosemary, smoked paprika). Its lively acidity makes it especially good slightly chilled on warm days
