Enology

This elegant white blend is sourced from Macabeo and Garnacha Blanca vineyards in Almonacid de la Sierra at 650 m above sea level, cultivated under dry‑farming on limestone‑clay soils. Harvested by hand, fermentation takes place with indigenous yeasts in stainless steel tanks at 15 °C. The wine rests on its lees for 4 months prior to bottling, maintaining freshness and minerality while building texture. No fining or filtration applied. 

Tasting Notes

Pale lemon with green highlights. Aromas of ripe pear, white apple, citrus zest, and light floral nuances. The palate is crisp, refreshing, with creamy texture and saline minerality. A long, clean finish that lingers with subtle fruit character. 

Food Pairing

An excellent companion for seafood, raw shellfish, ceviche, rice dishes, salads, and grilled vegetables. Also complements soft cheeses and light white meats seasoned with herbs or citrus.
