Enology

This wine is crafted from 100% Albillo Mayor, an indigenous white variety of Ribera del Duero. Grapes undergo a 12-hour cold maceration at 10 °C, followed by gentle pressing. The must ferments at approximately 15 °C and the wine is aged for 3 months on fine lees, resulting in a clean, straw‑yellow color with bright clarity and delicate structure  .

Tasting Notes

Pale straw color with greenish reflections. On the nose, expressive floral aromas interwoven with soft mineral tones. On the palate, it is structured yet elegant, with gentle acidity and a clean, refreshing finish. Ideally paired with smoked foods, light rice and pasta dishes, and delicate seafood  .

Food Pairing

Perfect companion to smoked fish, seafood paella, white rice dishes, or delicate fish. Also pairs well with pasta in light sauces, shellfish, and mild soft cheeses. The slight mineral character enhances dishes seasoned with herbs or citrus
