Enology

A crisp, unoaked white crafted from Verdejo and Sauvignon Blanc grapes harvested from the winery’s higher-altitude, cooler vineyards. Fermentation occurs at low temperatures over approximately two weeks, followed by 3–4 months of lees aging with regular bâtonnage (stirring) to build texture and complexity — all without oak influence.
