Enology

Grapes are picked in the early morning and macerated at low temperature for 24 hours before fermentation begins with free-run must only. Fermentation takes place in stainless steel at cool, controlled temperatures. The wine then undergoes aging on fine lees for 5 months with weekly bâtonnage, enhancing texture and complexity.

Tasting Notes

Pale straw with green reflections. The nose unfolds intense herbaceous aromas paired with white and stone fruit, citrus, slight tropical nuances, and a gentle spicy touch. On the palate, it’s broad, fresh, and creamy, showing savory balance through lees aging and finishing long and captivating.

Pairs beautifully with seafood, shellfish, grilled fish, leek tortilla, vegetable salads, and soft cheeses. The crisp acidity and savory depth help it stand up wonderfully alongside light and herb-driven dishes.
