Enology

Made from 40–60‑year‑old Malvasía Volcánica vines growing in volcanic soils beneath a layer of ash, this sparkling wine follows the Traditional Method (second fermentation in bottle). After early harvest to maintain low alcohol levels, it undergoes at least four years of aging on its lees, with continuous bottling and manual disgorging to preserve its freshness.

• Appearance: Pale yellow with fine, persistent bubbles and a steady crown.

• Aroma: Clean and intense, featuring fresh white fruit, citrus, white flowers, and delicate baked‑goods nuances from extended lees aging.
