Enology

Fermentation starts with a prior cold maceration using only select free-run must from low-yielding vineyards (~5,000 kg/ha). Following controlled-temperature fermentation, the wine spends six months resting on fine lees, achieving elegance, depth, and a high-end vinous expression.

Tasting Notes

• Appearance: Intense straw-yellow with crisp, steely lemon reflections.

• Aroma: Complex and expressive, offering mineral and balsamic notes, as well as scents of white flowers, peach, green apple, and cantaloupe, woven over a citrus background.

• Palate: Enjoyably structured and flavorful, with a long, persistent, and refined finish.

Food Pairing

Pairs beautifully with seafood, fresh fish, sushi, rice dishes, calçots (Spanish green onions), and seasonal produce like asparagus and eggplant. Best served chilled at 9–10 °C.
