Enology

Made from 20–30 year-old organic Sauvignon Blanc vines situated at 750 meters elevation in Valdestillas, near the Duero River. Grapes are harvested at night and cold-fermented using only free-run must. The wine is then aged on fine lees for five months to build texture and complexity.

Tasting Notes

• Appearance: Bright straw yellow with steely, golden edges.

• Aroma: Intensely aromatic, revealing white stone fruit (apricot, peach), citrus hints, green apple, and grassy herbal nuances.

• Palate: Dry and elegant, with crisp acidity, fresh minerality, and a refined, balanced finish.

Food Pairing

An excellent aperitif that shines with seafood, shellfish, and light white fish. It also pairs well with high-acid cheeses (goat or sheep), fresh vegetable tapas, Thai-style dishes, and bright salads featuring asparagus or avocado.
