Enology

Crafted from 100% Xarel·lo sourced from old goblet-trained vines grown at 300 m altitude in the Penedès region. Grapes are hand-harvested with a yield of around 8,000 kg/ha. Vinification follows the traditional method, with secondary fermentation in the bottle and a prolonged aging period of at least 78 months on lees. Bottled without dosage to preserve purity and terroir expression.

Tasting Notes

Appearance: Bright golden hue with fine, persistent bubbles.

Nose: Complex aromas of stone fruit, dried apricots, Mediterranean herbs, and balsamic nuances.

Palate: Dry, crisp, and mineral-driven with vibrant acidity, delicate creaminess, and a subtle saline note on the long finish.

Perfect with fine cheeses such as Manchego or Parmesan, oysters, shellfish, lean fish, and light appetizers. Its elegance and structure also complement cured meats and gourmet tapas.
