Enology

Made from ungrafted, centenarian Listán Blanco vines planted on volcanic soils (ash and basalt). Vineyards are naturally cultivated—mostly inaccessible except by hand or animal. The wine is fermented using wild yeast in a combination of stainless‑steel tanks and large wooden foudres, then age briefly on lees to enhance texture and depth.

Tasting Notes

• Appearance: Pale straw yellow with greenish hints and impressive clarity.

• Aroma: Complex and mineral‑driven with notes of lemon zest, green apple, white flowers, wet stone, and subtle smoky flint from its volcanic origins.

• Palate: Crisp and linear, with vibrant citrus, pear, underripe pineapple, and manifest saline minerality balanced by lees‑induced textural roundness. The finish is long, zesty, and mineral‑rich—elegant and expressive.

Food Pairing

A wonderful match with seafood—especially grilled octopus, shellfish, and fresh fish—thanks to its bright citrus and mineral profile. Also pairs beautifully with light appetizers and dishes that complement its saline, volcanic character.
