Enology

Grapes are sourced from over 80-year-old, ungrafted, organic vineyards at extreme high altitude. Whole-bunch pressing is followed by spontaneous fermentation with native yeasts in 1,500 L foudres, with partial malolactic fermentation. The wine is aged on its lees in these same foudres until bottling.

Tasting Notes

Brilliant mountain‑hay gold in the glass, with rich aromas of citrus fruits, stone fruit, quince, macerated pear, herbaceous notes, and toasty spices. Creamy textures of white pepper and lemon pith weave through a long, expressive finish that reflects old-vine intensity and volcanic minerality.

Pairs beautifully with seafood (especially grilled shellfish), fresh fish, light poultry, and refined appetizers. Its vibrant acidity and textured finish make it a standout at the table. Critics highlight its mineral precision and gastronomic potential.
