Enology

Composed of fruit from over 80-year-old Listán Negro vines on terraced, volcanic slopes. The grapes are hand-harvested in 15 kg crates, fermented whole-cluster in open oak casks, then aged for 8–9 months in 500 L French oak barrels before bottling. Organic, biodynamic, and vegan practices are maintained throughout.
