Enology

Made from ungrafted, century-old Listán Blanco vines planted at 1,687 m altitude—the highest vineyards in Europe. Grapes are fermented on skins and stems for 10 days in stainless steel. After pressing, the wine is transferred to 1,000 L French oak vats for 8 months of lees aging, then bottled unfined and unfiltered.
