Zurbano is created using traditional carbonic maceration in barrel—a technique dreamed up by Teodoro Ruiz to enhance fruit-forward expression. The grapes are organically sourced from vineyards in San Vicente de la Sonsierra and fermented whole clusters in oak barrels, followed by gentle pressing and aging.
