Enology

Crafted from a balanced blend of 67 % Monastrell (from 50‑year‑old, dry‑farmed vineyards) and 33 % Tempranillo (from trellised vines), located over 800 m elevation in the Bullas PDO. Grapes are hand‑harvested and vinified separately using cold maceration and native yeast fermentation. Malolactic fermentation takes place in barrel, followed by 8 months aging in French, American, and Hungarian oak barrels, allowing the wine to develop both power and elegance. 

Tasting Notes

Deep cherry red with violet rim. Aromas of ripe black fruits (blackberry, plum), Mediterranean herbs (bay leaf), balsamic notes, and well-integrated oak (toast and vanilla). The palate is full-bodied and elegantly structured, with smooth tannins, fresh acidity, and a persistent finish featuring mineral and spicy hints.   

Food Pairing

Pairs beautifully with grilled or roasted red meats, game dishes, hearty stews, and mature cheeses. Also excellent with dark chocolate or dishes seasoned with rosemary, thyme, or paprika.
