Enology
Hand-harvested from dry-farmed Macabeo vines in the high-altitude vineyards of Bullas (approx. 800 m above sea level). The wine undergoes extended skin contact (“double paste”) during fermentation, giving it its golden-orange hue and strong structure. After fermenting with skins, it is racked into 500 L French oak barrels and aged 8 months under a flor veil (velo de flor), allowing biological aging while preserving fruit intensity. The wine is produced without stabilization, clarification, or filtration, often leading to natural tartrate crystals.
Tasting Notes
Orange-gold in color, with a textured complexion. On the nose, expect aromas of stone fruit (yellow plum, apricot), citrus zest, white flowers, and a subtle balsamic background. The palate is medium-bodied with expressive acidity and a salty-mineral finish. Retronasal flavor includes citrus peel bitterness and herbal depth, creating a harmonious and persistent tasting experience.
Food Pairing
Ideal with Mediterranean dishes: ceviche, raw shellfish, grilled vegetables, and light fish. The wine’s structured acidity and layered texture also pair beautifully with dishes featuring herbs like rosemary or thyme.
