Enology

Vinified from hand‑harvested Monastrell, Garnacha, and Syrah grapes grown at over 800 m elevation in the Hoya de los Hermanos valley near Cehegín, Murcia. Grapes undergo cold maceration, gentle destemming and soft pressing, followed by low-temperature fermentation in stainless steel tanks to maximize aromatic complexity and color retention. Malolactic fermentation and a brief 2 months aging in a mix of French and American oak barrels add subtle structure. The wine follows minimal intervention principles—no stabilization or clarification is applied. 

Tasting Notes

Ruby red with bright purple hues. Complex aromas of ripe blackberries, plums, and Mediterranean herbs are enhanced by subtle oak spicing and fresh acidity. On the palate, medium to full-bodied, with smooth tannins and balanced depth, finishing persistently with hints of balsamic and minerality. 

Food Pairing

Pairs exquisitely with grilled red meats, lamb, rich pasta dishes, and charcuterie. Its fresh structure and ripe fruit character also harmonize beautifully with dishes seasoned with rosemary, thyme, or smoked paprika.
