Enology

AALTO  is made from 100% old-vine Tinto Fino (Tempranillo), carefully hand-harvested from over 40-year-old vines located in nine villages throughout the Ribera del Duero. After a rigorous selection of bunches and berries, fermentation was carried out in stainless steel tanks at controlled temperatures. The wine then underwent 20 months of aging in French (80%) and American (20%) oak barrels, 70% of which were new. 

Tasting Notes

Deep, dark cherry color with high intensity. On the nose, AALTO presents intense aromas of ripe black fruit, floral hints (violets), and well-integrated oak (vanilla, toast, and cocoa). The palate is powerful yet elegant, with velvety tannins, vibrant acidity, and a long, persistent finish with notes of licorice, minerals, and subtle spice. Balanced and age-worthy, this wine has exceptional cellaring potential.

Food Pairing

Ideal with dry-aged steaks, roasted lamb, venison, and dishes with earthy or smoky components. Excellent alongside aged cheeses, Iberian ham, and gourmet stews. This wine’s depth and complexity pair beautifully with black truffle risotto or slow-braised oxtail.
