Enology
Aranzá is made from over 60-year-old Palomino vines planted on albariza tosca cerrada soils in the Pago Balbaína Baja vineyard near the Atlantic Ocean. The grapes are hand-harvested and fermented with native yeasts in 500L used Manzanilla barrels, with no temperature control. After two months of aging on fine lees, the wine is moved to stainless steel for six more months before being bottled unfiltered with only minimal sulfur addition.
Tasting Notes
Brilliant golden-straw color. The nose reveals vibrant aromas of quince, apple skin, jasmine, and a saline minerality. On the palate, it is dry, fresh, and textured, with light acidity and subtle notes of citrus zest, green herbs, and chalky minerality. Balanced, expressive, and clean.
Food Pairing
Ideal as an aperitif or with shellfish, ceviche, white fish, and seafood tapas. Also pairs beautifully with aged Manchego cheese, herb-infused salads, and dishes with citrus or Mediterranean flavors.
