Enology
Made from hand-harvested Malvasía grapes from four small producers in Tinajo using heroic viticulture techniques (planted in protective holes in volcanic soil). Grapes are pressed whole, fermented with native yeasts, and aged on their lees — in 500 L French oak barrels and stainless steel tanks. Lees are kept in suspension with bâtonnage for up to seven months. The wine is then blended, lightly clarified, bottled, and further refined (8–12 months in bottle).

Appearance: Pale yellow, evolving to golden with age; crystal-clear and bright.

Aroma: Tropical layers of mango, pineapple, and fresh citrus mingled with delicate orange blossom, jasmine, and herbal notes. Yeasty and bakery tones develop with aging.

Palate: Full-bodied and richly textured yet balanced by vibrant acidity. Shows persistent citrus freshness, fennel nuances, and a salivating mineral finish with a long, layered complexity.
Food Pairing
Versatile and remarkable with Lanzarote’s seafood, especially grilled octopus with mojo verde or salted fish stew. Also complements herbal marinades, roasted fennel, local goat cheese with almonds, and North African dishes like lemon‑cumin tagines. Additionally great with grilled vegetables, honey‑roasted carrots, or salads featuring mango and avocado.
