Enology

Made from pre-phylloxera Listán Negro vines aged 45–60 years, cultivated under volcanic ash. The wine is crafted using the “lágrima” method—raising the must from the first gentle “tears” of the press with minimal skin contact. Fermented at 17 °C and aged briefly on fine lees before clarification and filtration  .

Tasting Notes

• Appearance: Pale pink—bright and clean. 

• Aroma: Fresh red berries (strawberry, raspberry, redcurrant), with signature Listán Negro notes like tomato leaf or balsam. 

• Palate: Crisp, fresh, and balanced with good body. Medium-plus acidity with an expressive texture and gently lingering finish. 

The wine earned a Gold Medal at the 2025 Spanish Wine Awards—renowned for its floral, citrus, and saline character. 

Food Pairing

Excellent as an aperitif, it also pairs flawlessly with seafood salads, sushi, seafood dishes, and roasted vegetables, balancing freshness and character beautifully.
