Enology

Crafted by fermenting Listán Negro and Syrah separately, each brings a distinct contribution: Listán Negro lends a vibrant Atlantic character, while Syrah (grown on-site) imparts structure. After fermentation, both are blended prior to malolactic fermentation, which occurs in 500 L French oak barrels. The wine is aged in barrel for approximately six months, followed by around six months of bottle aging for added roundness and elegance. Limited production, with only 17,940 bottles released. 

Tasting Notes

• Appearance: Intense, clean garnet-red—bright and clear. 

• Aroma: Complex layers of cassis, raspberry, toffee, caramel—accented by balsamic notes of mint and eucalyptus from Listán Negro. 

• Palate: Fresh and balanced, with smooth, ripe tannins that lead through a structured, lingering finish—an expressive profile that invites another sip. 

Food Pairing

Excellent with red meats, game, white meats, and charcuterie. Its refined fruit and structure also complement grilled or roasted dishes and medium-aged cheeses.
