Enology

Made from organically farmed Verdejo and Sauvignon Blanc grapes grown at high altitude (700–800 m) on limestone-rich, nutrient-poor soils. The grapes are hand-harvested and pressed quickly to preserve freshness. Fermented in stainless steel at low temperatures over 30 days, then aged for 3–4 months on fine lees with regular stirring (bâtonnage), enhancing body and texture.

• Appearance: Brilliant light yellow with subtle green reflections.

• Aroma: Bright citrus, tropical fruit, and chalky minerality.

• Palate: Medium-bodied, smooth, and vivid, with a clean, long finish featuring fresh pear and tropical fruit flavors.

A superb aperitif, it pairs beautifully with grilled seafood, chicken, salads, and rice dishes. Its refreshing acidity and juicy character also complement light tapas and citrus-flavored meals.
