Enology

This elegant rosé is organically farmed, hand-harvested, and vinified with minimal intervention. Grapes are softly whole-cluster pressed after a short maceration, then fermented in stainless steel at low temperatures to capture freshness. The blend undergoes traditional secondary fermentation in bottle and a minimum of 18–24 months aging on the lees before being disgorged without dosage. It’s a refined sparkling wine without added sugar. Organic and vegan certified.

Tasting Notes

• Appearance: Bright cherry-red to salmon-pink hue, clear and radiant.

• Aroma: Fresh red berries (strawberry, raspberry), floral and mineral notes, plus a delicate pastry undertone.

• Palate: Silky mousse with vibrant acidity, balanced red fruit character, and a long, inviting, tangy finish that’s both fresh and elegant.

Food Pairing

An excellent aperitif. Pairs beautifully with light fare such as grilled fish, seafood risotto, white meats, fruit-based desserts, and charcuterie. It’s also a delightful match with chocolate desserts or creamy savories.
