Enology
Crafted from Monastrell grapes grown in goblet-trained, dry-farmed vineyards between 8–80 years old, in the rugged Paraje de La Raja (Murcia). Harvest is done by hand, with careful selection. Fermentation takes place in inverted-cone stainless-steel tanks and large oak foudres. The wine is aged six months in first- and second-year French oak barrels and further refined in Italian clay amphorae (800 L), then undergoes reductive aging in the cellar for about a year.
Tasting Notes
Deep cherry-red with purple edges. Rich aromas of red and black fruit compote—plum and berry—wrapped in spicy, balsamic and roasted notes with anise. On the palate, it’s structured, muscular, and Mediterranean yet fresh, mineral, elegant, and long on the finish.
Food Pairing
Great with grilled or roasted meats, hearty stews, game, and intense cheeses. Its bold structure and vibrant fruit profile match richly flavored dishes beautifully.
