Enology
Produced using organic and biodynamic farming on the family estate, Mas del Habanero. The wine is fermented naturally using native yeasts, with aging in a combination of large-format 500 L French oak barrels (mix of older and newer barrels) and clay amphorae for 24–36 months. This approach reflects the varied soils, exposures, and elevations of the vineyard, delivering a true sense of terroir.
Tasting Notes
Saturated garnet-red in the glass. Aromas of dark berries, plums, tobacco leaf, pepper, and subtle smoky notes emerge with complexity. On the palate, it’s intense yet fresh, with vivid fruit and well-integrated oak, giving a clean and lingering finish that stands out with gastronomic appeal.
Food Pairing
Ideal with hearty dishes such as gamey meats, roasted white meats, braised stews, and steak with rich sauces. Also a superb match for charcuterie and mature cheeses.
