Enology

Made from old, organically farmed Listán Negro vines planted on steep, volcanic slopes in Santa Úrsula (El Farroillo and Tamaide). Harvest is manual, with grapes destemmed and fermented in stainless steel vats (2,500–5,000 L) at 22–25 °C. After fermentation, wine undergoes malolactic fermentation and spends several months in 500 L French and American oak before bottling.

Tasting Notes

Brilliant cherry-red with violet hues. The nose opens with lively aromas of myrtle, spices, licorice, and a subtle hint of black pepper. On the palate, juicy tannins and emerging minerality create a vibrant, zesty experience that’s both expressive and balanced.
