Enology
Grapes are sourced from 50–60-year-old vineyards located at high altitude (850–900 m) in sandy, limestone-rich soils under an extreme continental climate. The wine undergoes cold pre-maceration for 3 days to enhance color and freshness, followed by 8-day fermentation at ~27 °C and 7 additional days on skins. Malolactic fermentation takes place in stainless steel with 2 months of lees stirring, followed by 9 months of aging in 500 L French oak barrels.
