Enology
Produced from manually harvested, old vines (up to 60 years), planted in well-drained, clay–sandy, stony soils. The grapes undergo 15 days of maceration and fermentation in stainless steel at 25–27 °C. Malolactic fermentation and aging take place in French and American oak barrels for 16 months.
