Enology

Made from grapes grown in high-altitude vineyards (850–900 m) across Burgos and Valladolid, sourced from old vines aged 35 to 100 years. Aged for around 460 days in French oak barrels, with 15% undergoing malolactic fermentation in new oak. Bottling typically occurs nearly two years post-harvest.

Tasting Notes

• Appearance: Deep ruby color with rich garnet edges.

• Aroma: Layers of wild blackberries and blackcurrants with aromatic herbs like thyme and sage, enhanced by notes of cedar, leather, clove, and toast from extended oak aging.

• Taste: Fleshy and powerful with a well-structured palate, smooth tannins, and a long, balanced, and harmonious finish.

Pairs beautifully with grilled or roasted red meats, savory stews, cured meats, and aged hard cheeses. Its depth and complexity make it a perfect match for hearty, flavorful dishes.
