Enology

Produced by the Ulibarri family, historically shepherds and cheesemakers—“Artzaiak” means “shepherds” in Basque. Their vineyards are organically farmed, where sheep graze to control weeds and provide natural fertilization. Unlike most Txakoli producers, they harvest fully ripe grapes, ferment using indigenous yeasts, allow aging on the lees, and avoid filtration or stabilization for a true artisanal expression of the wine.

Tasting Notes

• Appearance: Light straw color with pale green reflections, fresh and inviting.

• Aroma & Flavor: Bright and zesty with citrus, green apple, and delicate floral notes, lifted by fine bubbles. (General profile of Txakoli: high acidity, slightly fizzy)

Food Pairing

Excellently suited to Basque-style pintxos and appetizers, seafood, shellfish, and light fish dishes. Also delightful as a refreshing aperitif.
